Today’s bit of Om Cooking is a recipe for “Monk’s Soup” which I was e-mailed a few months ago, it is pretty tasty, so I suggest making a big batch, grabbing a blanket and a few friends and sharing it outside on a beautiful day! Remember: feeding someone is a very strong act of good karma!

Prep Time: 10 Minutes
Cook Time: 45 Minutes

Ingredients

1 Quartt Water
1 Pound of Pumpkin (peeled and cubed)
1 Sweet Potato or Yam (also peeled and cubed)
1/2 Cup of shelled peanuts
1/3 Cup of Mung beans
3 Tablespoons vegetable oil
1 Quart coconut milk
1/2 Ounce cellophane noodles

Directions:

Bring the water to a boil and add pumpkin, sweet potatoes, peanuts and mung beans

Cook on medium heat for 35 minutes, if you like bean curd, this would be the time to add that after cooking it in a lightly oiled pan on both sides until light brown (if this is the case, slice curd lengthwise into 1/4 inch strips and leave aside)

Check the mung beans after 35 minutes, cook until soft.

Once mung beans are soft, ass coconut milk and a bit of salt

Bring to a boil again then add in cellophane noodles and fried bean curd.

ENJOY with good friends, family or even alone (but really, try and share this hearty dish with as many as you can!)
